Sweet N Sour Chicken

Sweet N Sour Chicken (cooked in the Tupperware Stack Cooker)


Ingredients
2 boneless, skinless chicken breasts
1.5 cups pineapple chunks, drained, reserving juice
2 Tbsp. water
2 Tbsp. orange marmalade
1 Tbsp. plus 2 tsp. corn flour
1/4 cup ketchup
2 Tbsp. soy sauce
3 Tbsp. apple cider vinegar
2 Tbsp. sugar
1/4 tsp. salt
1/8 tsp. pepper
1/2 red capsicum

Method:
Cut chicken into small pieces and set aside
Combine pineapple juice, water, marmalade, cornstarch, ketchup, soy sauce, vinegar, sugar, salt, and pepper in the base of the Stack Cooker and mix well
Microwave on high (800W) for 3-4 minutes, or until mixture thickens, stirring once during cooking
Add chicken and pineapple to the sauce
Cover and microwave on high (800W) for 8 minutes or until chicken is no longer pink in centre.
Stir through sliced capsicum and microwave on high for 1 more minute
Let stand, covered, for 3 minutes before serving with rice.


I assume you could cook this on the stove. Instead of microwaving, follow the steps but cook on the stovetop. It may take a little longer.
